Stevia is not able to survive in freezing conditions because it likes the hot weather and the sun. You can grow it outside in zones 9 and warmer and it will survive to grow again in the spring. It may even be able to be grown in zone 8, although it needs to be protected carefully.

Stevia should be planted in 12 inch containers with very high quality soil. Place the plants in direct sunlight and water them when the soil is dry.

The plants should be spaced 18 inches apart in loose, well drained and loamy soil. It could reach a height of up to 3 feet. Plant it after the last frost and use quality compost.

Use mulch in the summer time to prevent drying. Be cautious about keeping the soil too soggy and ensure that it has proper drainage. If the plant is wilting, the roots are rotten or it is being attacked by insects.

The fall flowers should be trimmed to stimulate growth of new leaves. Clip off the white blooms close to the plant. You may also want to use the leaves in the autumn before it starts blooming, because that is when they are sweetest.

Dry the leaves after plucking them to continue to use them for a longer amount of time. Lay out the leaves and tender stems on some nonmetallic surface and allow them to dry in the sun.

It takes approximately a day for them to dry and you can then collect them and put them in a container. The leaves can be crushed to make a powder.

You can use the powder to sweetened drinks and foods.
